Everything but the kitchen sink

Last night for dinner I decided to take some of the advice you guys gave me about eating on the cheap. (I should be giving YOU that kind of advice, but whateves—muchos gracias, homies!) So instead of running down the street to grab a $2 cheese slice, I looked in my fridge and cabinets to see what I could throw together.

The only thing that sounded yummy to me was the lone sweet potato I had hanging out on the bottom shelf. So, I took a cue from the recipe sweet potato/black beans recipe My Little Apartment gave me, and made my own version of the dish. First, I cut up the sweet potato, drizzled it with olive oil, sprinkled on salt and loaded on the pepper. (I didn't have sea salt like the recipe called for, which would have been better.) Then I popped that sucker into the oven for 40 minutes at 400 degrees. Next up, beans!
Yes, I'm posting a pic of canned black beans on my blog—get over it. We had a bit of a tussle, hence the busted up lid. I came out victorious though, without a scratch on my finger. Note to self: NEED TO BUY ELECTRIC CAN OPENER. Sure, I'll just add that to the things I want/need/will cry my eyes out until I get it list. I emptied the beans into a colander and then cooked them in a pan for a few minutes. I added onions, black pepper, garlic powder, red pepper flakes and a splash of Tabasco sauce. Basically, everything except the kitchen sink! I didn't have many ingredients (including the lime and salsa that was recommended), so I just dumped in everything I DID have and it turned out to be pretty darn tasty!

Ok, so maybe it doesn't look so tasty, but it was. I love sweet potatoes, and black beans always seem to make everything better, so I knew it would be a winning combo for me. Score! I'm weird in the sense that I don't need something to be really flavorful in order for me to like it. I like my food like I like my skim lattes: HOT. If it's hot, I will like it.

I wanted one of these for dessert, but since I already had one after lunch, I had this instead...

A cup of green tea. Not too exciting, but just drinking it out of my fave London mug made me happy. I want to go to London. Now. Can someone take me there? I will crawl into your suitcase ;)

  2. That sounds like a good idea. I too struggle with eating healthy on a shoestring budget. I totally feel the London thing. I lived there for 4 months and it is the most amazing city ever. I'd LOVE to go back!
