I spent last Thanksgiving with my boyfriend's friends--Brits who don't actually celebrate the holiday, but get just as excited about it as I do. (Well, almost). Look at this nice spread--pretty impressive, right?!
I made the corn pudding and sweet potato casserole--both were a big hit. The sweet potatoes are my favorite, so I decided to share my Aunt Elaine's recipe with you--it is SO.GOOD. If anyone wants the corn pudding one as well, let me know!-6 c. mashed sweet potato (2 lg. cans yams- drain liquid very well)
-1 1/2 - 2 c. granulated sugar
-1 tsp. salt
-1 stick butter, melted
-2/3 c. 2% milk
-2 tsp.vanilla
Topping:
-3 c. light brown sugar
-3 c. chopped pecans
-1 c. flour
-2 sticks butter, melted
Beat eggs some then add sugar. Add remaining ingredients. (You can do this ahead and refrigerate if you want.) Then bring to room temp. For the topping, toss pecans with br. sugar, flour and butter. Sprinkle on top of sweet potato mixture. Bake @ 350 for 35 min. The pan or glass casserole dish should be 12x8 or even a 9x13.
As you can see, we don't skimp on the butter or sugar in our family! That's some Paula Dean shit right there, y'all. It's sooo yummy though--worth every single calorie!

kibbi and tabouli -- my dad's fam is lebanese so it's the one time of the year we get to grub on mom's slightly americanized versions of the traditional dishes. i can't wait!!

I love oyster dressing. I miss my grandma's, she made the best. I also love regular cornbread dressing and sweet potatoes with marshmallows on top! I'm with you, turkey is o.k. and everything, but I'm all about the sides.
ReplyDeleteStuffing...all the way. Cornbread and sausage. The turkey is a merely a vehicle for making it full of savory deliciousness. But like you, Ellen, I am going to try to stick to the healthier stuff and go low key on the carbo-loaded goodness.
